And they got some good marbling good fat in there. We’re going to just take off a little bit of this excess on the ends here. That’s a little bit too much. These are bigger steaks. These are just over a pound each. And prepping it. We’re going to do this quick and easy. So this is just some neutral oil. Uh you can use whatever tickles your fancy. This isn’t a time to use your expensive oil. It’s not necessary. It’s not the flavor that you’re looking for. Um save your money. Use that for your Italian dishes or something. This is just a little avocado oil. And just going to get a good coating all over them. Now we got a little butcher’s blend salt and pepper. So it’s a kosher salt. And more coarsely ground pepper. So we’re just going to get an even coat of this. Another bigger steak so a little extra seasoning on there. Both sides. And if you got a little bit extra on the cutting board, just go ahead and kind of mop that up. It’s a good hack. Yeah. Get it all the way around. So we’re just going to find the middle of the steak. Mhm. And we’re going to insert that probe right into the center. That way when the alarm goes off we know we’re cooked all the way through. Mm. And this is the thicker of the two so it’ll be good. And set our temperature and we’re going to go for 130 degrees. So we’re just going to use a baking sheet with a raised rack. And that’s just so air can get all the way underneath them and cook them evenly. You can cook them flat I suppose. But I like having a little space underneath them. It seems to turn a little bit better. And then from there it just goes right into your oven. Okay. And this is preheated for two seventy-five. Well the steak’s in the oven. We’re going to make some compound butter. Mm. And so I have some here already at room temperature ready to go. And this is just some Kerrygold Irish butter. All the best. Yep. And as you can see it’s already it’s already fairly soft. So to that we’re going to add about a quarter of a cup of fresh herbs. So we’ll start with a little bit of parsley. So to give you an idea that’s our quarter of a cup. Uh we need a little rosemary. You don’t need to use fresh herbs if all you have is store bought dried. Uh that’s fine too. Here’s some thyme. That can go right into the butter. Healthy pinch of kosher salt and pepper. And just a clove of garlic. And lastly we’ll just put in the zest of the lemon. Beautiful. Incorporate all this together. That’s what you’re left with. Just grab yourself a piece of clean wrap. Wax paper would be fine. I’m just going to roll this up. So basically just make a little butter log Put your ends in. It should look something like that. Look at that. Oh, there they are. And they look extremely plain. Yeah. Pretty boring looking. But we’re not done with them yet. Of course not. So we know we’re perfectly cooked all the way through. So now all there is to do is get a nice crust on it. We’re going to oil the pan. We’re on high heat right now. And we’re going to let that go for about a minute or five. Butter coins. So next we’re just going to get a little tin foil ready for our steak butter coins here. Mhm. And go right on top. We’re just going to wrap this kit up for four five minutes and let it rest. Okay so this has a chance to rest for about 5 minutes. And let’s take a look. Up in the hat. Oh man. You can see that butter just melted right into it. Uh huh. Number two. Those are some good looking rib eyes. Okay, let’s see what we got this guy here. Oh jeez. Perfect. Look at that. Gorgeous. Perfect all the way through. Mhm. Oh boy. Who wouldn’t want to play with that? Tasty. Alright, let’s go in for a bite here. Let’s go in for this nice fatty piece here. Pretty tasty. Yeah. It smells really good. Oh my god. Good? Stupid good. I want to bite. He wants a bite.
