Le cidre apporte une aciditรฉ fruitรฉe qui casse le gras de la crรจme, tandis que les champignons absorbent tous les sucs de la viande. En fin de cuisson, la sauce devient onctueuse, presque sirupeuse, enveloppant chaque mรฉdaillon d’un manteau gourmand. Cโest le plat rรฉconfortant par excellence, alliant la rusticitรฉ du terroir ร la finesse d’une sauce veloutรฉe. Ingrรฉdients (Pour 4 personnes) 1 filet mignon de porc (environ 600-700 g) 250 g de champignons de Paris (coupรฉs en quartiers) 25 cl de cidre brut 20 cl de crรจme liquide entiรจre (pour l’onctuositรฉ) 2 รฉchalotes ciselรฉes 30 g de beurre 1 c.ร .s d’huile d’olive Quelques branches de thym frais Sel et poivre du moulin Prรฉparation Le Dorage : Coupez le filet mignon en mรฉdaillons de 3 cm. Dans une sauteuse, faites chauffer l’huile et le beurre ร feu vif. Faites dorer les morceaux 2 minutes par face. Retirez-les et rรฉservez-les. La Garniture : Dans la mรชme poรชle, jetez les รฉchalotes et les champignons. Faites-les revenir jusqu’ร ce qu’ils soient bien colorรฉs et que leur eau se soit รฉvaporรฉe. Le Dรฉglacage : Versez le cidre. Grattez bien le fond avec une spatule pour rรฉcupรฉrer les sucs de cuisson. Laissez bouillir 5 minutes pour que le liquide rรฉduise de moitiรฉ. La Crรจme : Ajoutez la crรจme et le thym. Mรฉlangez bien. Le Mijotage : Remettez les morceaux de porc et leur jus dans la sauce. Baissez le feu, couvrez et laissez mijoter 10 minutes. Dish – ๐ Roasted Chicken Tenderloin with Herb Potatoes & Green Beans ๐ฅ๐ฟ Prep Time: 15 minutes Cook Time: 35 minutes Servings: 4 Calories per serving: ~480 kcal Ingredients ๐ 600g chicken tenderloin or breast fillet, whole ๐ 600g baby or waxy potatoes, halved or quartered ๐ฅ 200g green beans, trimmed ๐ข 3 tbsp olive oil ๐ซ 3 garlic cloves, minced ๐ง 1 tsp smoked paprika ๐ถ๏ธ 1 tsp dried oregano ๐ฟ 1/2 tsp chili flakes (optional) ๐ถ๏ธ 1/2 lemon, juiced ๐ Salt & black pepper to taste ๐ง 1 tbsp butter (optional, for green beans) ๐ง Fresh parsley, chopped (for garnish) ๐ฟ Instructions ๐ฉโ๐ณ Preheat the oven to 200ยฐC (400ยฐF). In a large bowl, toss the potatoes with 1.5 tbsp olive oil, half the garlic, salt, pepper, paprika, and oregano. Spread onto one side of a large baking dish. Rub the chicken with remaining olive oil, garlic, lemon juice, salt, pepper, and chili flakes (if using). Place on the other side of the baking dish. Bake everything uncovered for 30โ35 minutes, or until the chicken is golden and cooked through (internal temp 74ยฐC/165ยฐF) and the potatoes are crispy outside, tender inside.
