You can use any choice of meat roast. Brisket, French roast, minute steak, etc. I’m using a beautiful marbleized piece of Teva Glatt kosher Angus beef chuck roast conveniently found at Costco. Ingredients for your meat: •4 Lb. Chuck roast •1/4 cup oil (any oil of your choice) •3 tbsp. salt •2 tsp. black pepper •2 tsp. paprika •2 tsp. onion powder •1 tsp. garlic powder Ingredients for your dish: •1/4 cup oil •2 large sliced onions •2 full leeks washed and cut into small rounds •4 carrots peeled and cut into sticks •2 celery ribs cut into sticks •2 whole garlic heads •about 12-15 baby potatoes peel on •1/4 cup honey (can be subbed with maple, or silan too) •4 cups water or chicken broth Directions: In a large pot, heat your oil and add your sliced onions. Wash and pat dry your meat and place it in a large bowl. Season your meat accordingly and rub it all around your meat. Once your onions are translucent, add your leeks and sauté together for about five minutes. Make a well in the center of your pot and add your meat in the center. On a medium flame, you will sear the meat on both sides. Lower the flame to low and allow the meat to release its juices. Cover and cook for 20 minutes on low. Add your carrots, celery and garlic heads and your honey water mixture. Cover and cook for one hour. At this time you can taste and adjust the seasonings if needed. Add your washed baby potatoes and cover for an additional hour. Place a piece of parchment paper and foil on top and seal it well. Placing a preheated oven at 375° for a final 30 minutes. You can remove the covers for an additional 10 minutes.
