Nimrod – HOMEMADE LONGGANISA (Skinless or With Casing) Ingredients: 1 kilo ground pork (70% lean, 30% fat) 1 tablespoon rock salt 1 tablespoon brown sugar 1 tablespoon soy sauce 1 tablespoon vinegar (white or cane vinegar) 1 tablespoon paprika (for color, optional) 1 head garlic, minced (about 8–10 cloves) 1 teaspoon ground black pepper 1 teaspoon chili flakes (optional, for spicy version) 1 teaspoon ground oregano (optional, for herby flavor) 2 tablespoons cornstarch (binder for skinless type) — Instructions: 1. Mix the Meat In a large bowl, combine ground pork, garlic, salt, sugar, soy sauce, vinegar, pepper, and paprika. Mix well until sticky and well combined. Optional: Add chili flakes or oregano if you want a spicy or aromatic version. 2. Marinate Cover the bowl and refrigerate overnight (at least 6 hours) to let flavors blend. 3. Form the Longganisa Skinless version: Scoop about 2 tablespoons of the mixture. Roll into sausage shapes (around 3 inches long). Wrap each piece in wax paper or plastic wrap. Freeze until firm. With casing: Stuff mixture into sausage casings, about 3 inches long each. Tie ends with string or twist to separate links. 4. Cook Place longganisa in a pan with ½ cup water. Cover and cook over medium heat until water evaporates.
