Pork belly on a stick | Pork belly on a stick | By Miguels cookingwithfire | Let’s make some cherry cola pork belly on a stick. This is absolutely fantastic. I can’t wait to make it again. Strips of pork belly. These I get at Costco. I’m going to cut them right in half. Just like that. And then I’m going to score the fat just over the top. Not even a quarter inch deep. You know just hover it over. You don’t want to get into the meat side but just score it this way. Uh the meat’s not going to curl as it’s smoking. Mustard as binder. You can use water, spritz of water, you can use olive oil, you know regular oil. This is just going to help that seasoning stick to the meat really well. And I’m going to be using that Cherry Cola seasoning. That’s from Fire and Smoke Society. I’m going to be using some skewers just to it’s going to be easy for eating and stuff and dipping it. That’s a cherry cola seasoning. Smells incredible right off the bottle. Season it up really good. And I’m going to be using the PK 360. Gonna be running that at 275 degrees. Using cherry wood for smoke flavor. Just keeping that cherry theme. Now lay them right in there. Smoke them for at least an hour and a half to two hours or until the hidden internal of a hundred and sixty-five. Let’s make that cherry cola barbecue sauce. You want cherry flavored soda. Any soda would work. I got some brown sugar, ketchup, cherry, preserves and about a tablespoon of that cherry cola and some apple cider vinegar. This you’re going to find all in the common section. You want to you know run it on medium heat until it reduces by more than half and it becomes nice and runny. I’m placing it in a thermos just to keep it warm. Now this how the pork belly’s looking like. Hit onesixty-five. Now we’re going to dip it right in that barbecue sauce. We’re going to place it in a foil tray. And then we’re going to cut that with foil and we’re going to place it back in the smoker for an additional two hours at the same temperature. It’s going to tenderize it really good. Just like that and that cherry cola barbecue sauce smells incredible. Tied it up really good. Place it back in. Let it go. Now you going to check on it first. If it’s not tender you want to leave it back in there. But these were super tender. We’re going to dip it back in that same cherry cola barbecue sauce and we’re going to place it back on that grill for an additional 15 minutes. This is going to help that seasoning. Not the seasoning. The barbecue sauce get nice and tacky. Give it a really nice shine to it. But these were absolutely fantastic. Go ahead and give them a go.
